Instructions

  • 1.   Cook the potatoes with their skin on. Peel them and cut them into slices.
  • 2.   Slice the onions and sauté them with a little butter. Once golden, add the ham (or bacon), as well as the potatoes. Let simmer for 15 minutes.
  • 3.   If using white wine, now is the time to add it. Season with a little salt and pepper, let the potatoes soak in the white wine for a few minutes before transferring everything to a gratin dish.
  • 4.   Scrape the rind off the reblochon cheese with a knife, cut them in half lengthwise, and place them on top of the potatoes.
  • 5.   Bake in a hot oven (220°C) for 20 to 30 minutes. Serve with a green salad, or even some tomatoes lightly seasoned with shallot vinegar.
