Chicken and Sweet Potato Stew with Vanilla (Low GI SK)

Instructions

  • 1.   Sauté the chicken in a pot with 1 tablespoon of olive oil. Once it is golden brown on each side, remove from the pot and set aside.

    Slice the onions thinly and sauté them in the same olive oil, adding the minced garlic and spices.

    Peel and slice the sweet potatoes and add them to the pot once the onions are translucent. Add the chicken back in, split the vanilla pod, and cover with water and chicken broth.

    Let simmer for 40 minutes on very low heat.
  • 2.   Add the green beans 20 minutes before the end of cooking.
  • 3.   Sprinkle with chopped cilantro.

  • 4 chicken thighs
  • 800 g of sweet potato
  • ½ vanilla beans
  • 1 tablespoon of olive oil
  • 2 onions
  • 3 garlic cloves
  • 1 teaspoon of ground cumin
  • 2 tablespoon of ginger powder
  • 75 cl of chicken broth
  • 200 g of fresh green bean
  • 1 sprig of fresh coriander
