Cod in parchment paper, leek fondue

Instructions

  • 1.   For the parchment paper, place a few slices of zucchini on a sheet of parchment paper (or aluminum foil),
    place the cod, cherry tomatoes.
    Season with salt, add chili pepper, lemon juice, a drizzle of olive oil, and fresh herbs. Close and cook for 15 minutes at 220°C (425°F).
  • 2.   Meanwhile, prepare the leek fondue by washing and slicing the leek whites.
    Sweat them in a drizzle of coconut oil over low heat for 5 minutes.
    Add a splash of water and simmer for 5 minutes.
    Add coconut milk, salt, curry, and simmer for another 5 minutes until you obtain a creamy fondue.

  • 260 g of white fish
  • 1 tablespoon of lemon juice
  • 8 cherry tomatoes
  • 10 g of olive oil
  • 1 pinch of Espelette pepper
  • 225 g of leek white
  • 128 ml of coconut milk
  • 5 cl of water
  • 2 g of coconut oil
  • 1 teaspoon of curry powder
  • salt (according to taste)
