Leeks and Carrots with Bacon Confit

Leeks, just like carrots, can be delicately caramelized with a little sugar.

Instructions

  • 1.   Peel the leeks, keeping only the white part, wash them very gently, and cut them into 5 cm long pieces.
  • 2.   Peel the carrots and cut them into sticks.
    Melt the butter in a sauté pan.
  • 3.   When the butter foams, add the carrots and leeks and sauté them for 5 minutes, stirring.
    Add a glass of water, crumble the bouillon cube on top.
  • 4.   Stir, sprinkle with sugar, stir again.
    Cover and let it confit over very low heat for 30 minutes.
    Monitor the cooking: the water should be completely evaporated and the vegetables caramelized.
  • 5.   Grill the bacon in a pan without any fat.
    Put the vegetables in bowls and sprinkle them with bacon.

Notes & Suggestions

  • Do not add salt, the bouillon cube and bacon are salty enough.
