FIADONE Ricotta & Lemon Cake with 0 sugar and low glycemic index

FIADONE Ricotta & Lemon Cake #lowglycemicindex accompanied by red fruits #glutenfree This is a Corsican cake that is traditionally made with Brocciu cheese, but I didn't have any so I used Ricotta cheese, which works just as well. I gave it a low glycemic index twist. A light, fresh and super enjoyable cake. 0 guilt ❤. And on top of that, it's extremely simple and quick to make.

Instructions

  • 1.   Recipe for 6 people:
    - 250g of ricotta cheese
    - 2 lemons (yellow or green)
    - 2 eggs
    - 45g of Xylitol (birch sugar from a health food store)
    - 40g of almond powder
    - red fruits for topping (strawberries, raspberries, blueberries)
  • 2.   1⃣ Beat the eggs with the ricotta cheese. Add the Xylitol and almond powder. Finish with the zest of 2 lemons, the juice of only one lemon (reserve the other juice for later). Mix well.
  • 3.   2⃣ Pour the mixture into a round silicone mold (18 cm) or a loaf pan. Bake for 35 minutes at 180°C (350°F).
  • 4.   3⃣ When the cake is completely cooled, gently remove it from the mold. Pour the juice of the second lemon over it until absorbed. Decorate with red fruits. Chill before serving.
