LOW-CARB TABBOULEH with no sugar and low glycemic index

For a low glycemic index tabbouleh, we use whole wheat couscous (GI=50-55), but we need to be careful and consume it in small quantities to avoid exceeding our daily carbohydrate intake. So, the solution is cauliflower couscous, have you heard of it? Well, I made a mix of the two. Personally, I like it with 100% cauliflower. And there's no guilt about the quantity! And it's also possible for those who are gluten-free. Alternatively, there's also buckwheat couscous, it's delicious, I tried it the other day ❤.

Instructions

  • 1.   Recipe for 4 people:
    - 200g of whole wheat couscous (weighed after cooking)
    - 200g of raw cauliflower
    - 8 pickles (or radishes)
    - 3 tomatoes
    - Half a cucumber
    - 2 shallots
    - a large amount of mint + flat-leaf parsley
    - Cumin
    - olive oil/lemon/mustard dressing
  • 2.   1⃣ Cook the couscous in water. Meanwhile, blend the cauliflower to turn it into couscous.
  • 3.   2⃣ Cut the tomatoes and cucumber into pieces, sprinkle with salt to release their water.
  • 4.   3⃣ Mix the couscous and cauliflower, add the vegetables, the shallots cut into pieces, and the pickles sliced.
  • 5.   Finish with cumin and herbs.
  • 6.   Drizzle with the dressing.

  • 100 g of whole or whole wheat semolina
  • 200 g of cauliflower
  • 8 pickles
  • 3 tomatoes
  • ½ cucumbers
  • 2 shallots
  • 1 stalk of fresh mint
  • 1 stalk of parsley
  • 1 teaspoon of ground cumin
  • 1 tablespoon of olive oil
  • 1 tablespoon of lemon juice
  • 1 teaspoon of whole grain mustard
