CAULIFLOWER PESTO GRATIN with no sugar and low glycemic index

CAULIFLOWER PESTO GRATIN #lowglycemicindex #glutenfree really delicious. Oh cauliflower and pesto, they go so well together. I added a little bit of cheese but in small quantity, here goat cheese but you can use parmesan, gruyère... Or nothing! For my children and my husband who absolutely wanted a potato gratin, I made a mix of half potato / half cauliflower in another dish.

Preparation time: 30 minutes
Cooking time: 25 minutes

Instructions

  • 1.   For 4 people:
    - 600g of cauliflower
    - 100g of plant-based cream (oat or cashew for gluten-free)
    - 90g of Greek sheep yogurt
    - 70g of pesto in a jar (about 30% basil) I love the vegan one from @kazidomi_fr ❤
    - 50g of Chavroux or St moret cheese
    - 2 eggs
    - 100g of bacon strips
    - 1 Chavignol goat cheese (optional)
  • 2.   1⃣ Cook the cauliflower in water or steam.
  • 3.   2⃣ Mix the Chavroux cheese with the pesto, add the yogurt, then the cream and the eggs. Season with salt and pepper.
  • 4.   3⃣ In a gratin dish, spread the cauliflower and bacon. Pour the mixture over it. Finish with the goat cheese in pieces.
    Bake for 25 minutes at 200°C (392°F).
  • 5.   Enjoy with a green salad.
