Moist Spice and Chocolate Cake with 0 Sugar and Low Glycemic Index

I make this very often and every time everyone asks me for the recipe. And it's also easy to make and quick (10 minutes of preparation). My kids love it too. Yesterday, the three of us finished it for a snack... You'll find a subtle flavor of gingerbread combined with chocolate, it's really to die for.

Instructions

  • 1.   The recipe:
    - 150g whole wheat flour (T150)
    - 50g barley flour (or spelt flour T110)
    - 1 pinch of salt
    - 1/2 packet of baking powder
    - 25g coconut sugar
    - 150g almond milk
    - 40g acacia honey
    - 100g butter or oil
    - 2 eggs
    - spices: 1 tsp cardamom, 1 tsp ginger, 2 tsp cinnamon, 3 tsp green anise seeds
    - 100g dark chocolate chips
  • 2.   1. Mix flours, salt, baking powder, coconut sugar, and spices.
  • 3.   2. Heat milk and honey in a saucepan for a few minutes and add the butter (or oil) until melted.
  • 4.   Mix 1 + 2. Then add the eggs and mix well. Add the chocolate chips.
  • 5.   Bake in a loaf pan for 30 minutes at 180°C (350°F).
  • 6.   Wait 15 minutes before tasting.

  • 25 g of coconut sugar
  • 150 g of almond milk
  • 40 g of acacia honey
  • 100 g of oil
  • 2 eggs
  • 1 teaspoon of powdered cardamom
  • 1 teaspoon of ginger powder
  • 2 teaspoon of cinnamon powder
  • 3 teaspoon of star anise
  • 100 g of dark chocolate chip
