Chocolate cake with zucchini, no sugar, and low glycemic index

I've seen quite a few recipes for chocolate cake with a savory ingredient (sweet potato, avocado, zucchini), so I decided to try it out. I didn't like the version with sweet potato, so I didn't share the recipe with you. But yesterday, I tried the version with zucchini. And I have to admit, it was actually pretty good. You couldn't taste the zucchini at all. My guests didn't notice anything and they liked it.

Instructions

  • 1.   Blend the zucchini, add the egg yolks and sugar, then blend again.
    Add the flour and mix.
    Melt the chocolate with the butter.
  • 2.   Mix everything together.
    Beat the egg whites until stiff peaks form, then gently fold them into the mixture.
    Bake for 23 minutes at 180°C.
  • 3.   It's even better when it's slightly warm.

  • 200 g of 70% dark chocolate
  • 220 g of zucchini
  • 40 g of spelled flour (T110)
  • 40 g of butter
  • 70 g of whole sugar muscovado
  • 3 eggs
