Turkey, Avocado, and Egg Tartine | 6 servings

Instructions

  • 1.   Toast the bread.
  • 2.   Mash the avocado in a bowl and spread it on the toasted bread. Add the tomato, turkey, and basil on top.
  • 3.   Poach the eggs in a pot of boiling water (about 3 minutes for a runny yolk and 4 minutes for a firmer yolk).
  • 4.   Drain the eggs and place one on each tartine. Season with freshly ground black pepper and serve one slice per person accompanied by a few arugula leaves.
