Veal Saltimbocca with Smoked Mozzarella and Rosemary

Instructions

  • 1.   Cut the smoked mozzarella into small slices.
  • 2.   Lay a veal escalope on a work surface, season with salt and pepper. Place a piece of cheese at one end and roll the meat around it. Using a knife, make a slit in the thickness of the saltimbocca and insert a sprig of rosemary to keep it closed. Repeat with the remaining ingredients.
  • 3.   Heat olive oil in a large skillet and sauté the saltimboccas for a few minutes on each side, until they are golden brown.
