1. Prepare the cabbage by removing the thick stems. Cut the leaves into large shreds.
2. Peel the other vegetables (carrots, turnips, potatoes...) and cut them into pieces that are not too big, as this soup is not strained.
3. Wash everything thoroughly.
4. Heat water in a pressure cooker. When the water is hot, add some sea salt and freshly ground pepper.
5. Place the shredded cabbage, all the vegetables, the peeled garlic clove, the fresh coriander branches, and the peppercorns and coriander seeds in the water.
6. Also add the smoked sausage.
7. Close the pressure cooker and let it cook for about 15 minutes.
8. Just before serving, add the white beans and let them warm up for a few minutes.
9. Sprinkle your cabbage soup with chervil or flat-leaf parsley.
10. Serve hot.
