Instructions

  • 1.   - prepare the couscous: put it in a bowl with 1 tsp of salt and 1 tbsp of olive oil and cover with warm water - slice 50g of chorizo and blend for 5 seconds on speed 6, then add ½ yellow bell pepper and a tomato cut in half and blend again for 3 seconds on speed 5; add this mixture to the couscous and mix well; wet and squeeze a large sheet of parchment paper, place it on the upper tray of the varoma and pour the couscous on it - without rinsing the bowl, blend the onion and garlic for 5 seconds on speed 5, then add 1 tbsp of olive oil and cook for 3 minutes at Varoma temperature on speed 1 - meanwhile, prepare the skewers; cut each chicken breast lengthwise (to obtain long strips), place a small cube of feta cheese at the edge and roll the chicken around it, skewer it with a small wooden skewer and add a slice of chorizo and a cherry tomato, place on the lower tray of the varoma, sprinkle with dried basil - when the timer goes off, add the red and yellow bell pepper pieces and blend for 5 seconds on speed 5 - add 5 tomatoes cut in half and blend again for 5 seconds on speed 5; scrape the sides and the lid - add a cup of water, 30g of sliced chorizo, 1 tsp of salt and pepper - thinly slice the carrots (about 150g) and peel the zucchini leaving some skin on, cut it into cubes and place them in the steaming basket, with the carrots at the bottom, creating a small well in the middle - place the steaming basket in the bowl, close it and place the varoma on top; cook for 25 minutes at Varoma temperature on speed 1 - when the timer goes off, keep the varoma warm under a towel, as well as the steaming basket with the zucchini and carrots - gradually blend for 1 minute on speed 10 - reserve a small bowl of this mixture for the sauce - add the cream to the bowl and set it to speed 4 with the measuring cup, pour 150g of water on the lid (which will drain through the small notches around the measuring cup) for about 20 seconds - your velouté is ready, pour it into a pitcher - put the reserved mixture for the sauce back into the bowl, add 50g of diced feta cheese and blend for 10 seconds on speed 6 - pour the couscous into a large shallow dish, add the zucchini and carrots all around, place the skewers in the center and drizzle them with some sauce, and serve the remaining sauce in a bowl.

  • 4 chicken breast
  • 1 chorizo
  • 200 g of feta
  • 50 g of thick sour cream
  • 1 pinch of basil
  • salt (according to taste)
