Hazelnut Butter and Powdered Almond Financiers

Instructions

  • 1.   Heat 150 g of butter over medium heat until it turns golden brown. Remove from heat and let it cool slightly.
  • 2.   Preheat the oven to 210°C.
  • 3.   Whisk the egg whites. Add powdered sugar and whisk until you obtain a firm and shiny foam.
  • 4.   Mix the almond powder with flour and the pulp of a vanilla bean, then incorporate everything into the egg whites using a whisk.
  • 5.   Incorporate the browned butter while stirring. Stop pouring in time so that the small black specks in the butter do not end up in the batter.
  • 6.   Grease the small molds and distribute the batter evenly among them.
  • 7.   Bake for 15 minutes in the preheated oven. Unmold and let cool on a wire rack.
