Instructions

  • 1.   Sift the flour with a teaspoon of salt, make a well in the center and pour in 15 cl of warm water. Knead the dough until smooth. Form a ball and let it rest for 30 minutes.
  • 2.   Meanwhile, prepare the filling: clean the leek and remove the tough green leaves. Finely chop it. Gently sauté the leek in 1 tablespoon of oil with the minced garlic for 4 to 5 minutes. Remove and replace with the minced pork. Cook for 2 to 3 minutes. Let it cool. Mix the leek with the meat, egg white, and a tablespoon of soy sauce.
  • 3.   Roll out the dough thinly and cut out 8 to 9 cm diameter discs. Place the filling in the center of each dough disc and shape them into small dumplings. Heat the remaining oil in a pan and gently fry the dumplings. Add 15 cl of water, cover and let them cook for 5 to 6 minutes. Once done, remove the cooking liquid and broil the dumplings for 2 to 3 minutes to make them golden and crispy. Prepare the sauce by mixing 4 tablespoons of soy sauce, vinegar, pressed garlic, and chili paste. Serve the hot crispy dumplings with the sauce on the side.

  • 2 tablespoon of vinegar
  • 1 pinch of chilli paste
  • 2 garlic cloves
  • ½ teaspoon of salt
