1. Bring a large amount of water to a boil in a saucepan and add a handful of coarse salt (10 g).
2. Cut large cubes of fresh salmon and strips of smoked salmon.
3. In a hot pan with a drizzle of olive oil, sear the pieces of fresh salmon for 1 minute on each side.
4. Remove them from the pan and season with fleur de sel and Espelette pepper.
5. Deglaze the pan with white wine, let it reduce, then add cream.
6. Cook the pasta al dente for the time indicated on the package, then drain and season.
7. Then put them in the pan with the smoked salmon.
8. Arrange the tagliatelle on plates, then place the pan-seared salmon pieces on top.
9. Serve immediately.
