Auvergne pie with young Cantal cheese

Instructions

  • 1.   Preheat the oven to 220°C (425°F).
  • 2.   Roll out 3/4 of the puff pastry in a large buttered dish and pre-bake for 5 minutes in the oven.
  • 3.   STEP 3
    Cut the half cabbage into four, plunge it into boiling salted water for 15 minutes, then drain and finely chop it.

    STEP 4
    In a sauté pan over high heat, brown the minced garlic and onion in oil, then add the cabbage and stir.

    STEP 5
    Season, fill the bottom of the pie with the cabbage mixture, add the ham, the young Cantal cheese cut into slices, and the cream.

    STEP 6
    Cover the pie with the remaining pastry. Brush the surface with the beaten egg yolk diluted with a little water. Make a small hole in the center of the pie and bake for 20-25 minutes at 220°C (425°F).
