Beef curry meatballs, parmesan cream, and penne

Small, tender beef meatballs flavored with curry, cooked in a parmesan sauce, and served with penne pasta.

Instructions

  • 1.   Peel and finely chop the onions and garlic.
  • 2.   Pick and finely chop the flat-leaf parsley.
  • 3.   In a bowl, mix the meat with the breadcrumbs, then add the chopped parsley, half of the chopped onions, eggs, and garlic.
  • 4.   Season with salt and add the curry.
  • 5.   Work the mixture with your fingers.
  • 6.   Shape small meatballs, about 2-3 cm in diameter, by rolling them between your hands, then coat them in flour.
  • 7.   Bring a large pot of salted water to a boil.
  • 8.   Add the penne and cook for 10-12 minutes (according to package instructions), then drain.
  • 9.   Heat sunflower oil in a frying pan.
  • 10.   Roll about ten meatballs, one by one, in the hot oil.
  • 11.   Stir them regularly to cook evenly and maintain their round shape.
  • 12.   Once the meatballs are cooked, wrap them in paper towels to remove excess grease.
  • 13.   Degrease the frying pan, then add the remaining onions and sauté for 2 minutes.
  • 14.   Deglaze with white wine and reduce by 3/4, then add the cream and grated parmesan.
  • 15.   Add the meatballs and simmer over low heat for a few minutes.
  • 16.   Divide the pasta into shallow plates and place the meatballs on top.
  • 17.   Pour the parmesan sauce over the dish.

  • 1 egg
  • 1 garlic clove
  • 2 teaspoon of curry powder
  • 1 parsley
  • 3 pinch of fine salt
  • 2 onions
  • 5 cl of olive oil
  • 30 g of breadcrumbs
  • 100 g of grated parmesan
  • 5 cl of dry white wine
  • 15 cl of liquid fresh cream
  • 500 g of penne
  • 10 g of coarse salt
