Whole wheat spaghetti n° 5 with forgotten vegetables and grilled beef

Whole wheat spaghetti topped with winter vegetables and grilled beef.

Instructions

  • 1.   Peel all the vegetables.
  • 2.   Cut the salsify into diagonal slices.
  • 3.   Dice the Jerusalem artichokes and the pumpkin.
  • 4.   Peel and finely chop the red onion.
  • 5.   Finely chop the chives.
  • 6.   Slice the beef steak.
  • 7.   In a pot, bring a large amount of water to a boil with a handful of coarse salt.
  • 8.   Cook the spaghetti for 1 minute less than the time indicated on the package.
  • 9.   Pour a drizzle of olive oil into a wok, then quickly sear the salted beef pieces.
  • 10.   Remove the meat from the wok.
  • 11.   In the same wok, pour a drizzle of olive oil and gently sweat the red onions with a pinch of salt.
  • 12.   Add the vegetables and water, then let cook for a few minutes (the vegetables should remain slightly crunchy).
  • 13.   At the last moment, add the spaghetti and meat to warm them up, and finish with the chives.
  • 14.   Adjust the seasoning if necessary.
