Instructions

  • 1.   Cut the chicken into cubes. Drain the mushrooms if they are canned, or wash and slice them if they are fresh. Peel and slice the shallot.
  • 2.   Heat the oil in a non-stick skillet and sauté the shallot for 2 minutes. Add the chicken, let it brown over high heat.
  • 3.   Once the chicken is browned, add the mushrooms, yogurt, mustard, salt, and pepper. Let it simmer for 10 minutes over low heat.
  • 4.   Serve hot with rice!

  • 1 shallot
  • 1 tablespoon of whole grain mustard
  • ½ teaspoon of thyme
  • 1 tablespoon of olive oil
