Lentil Stew with Morteau Sausage

Instructions

  • 1.   Peel and rinse the carrots. Make tagliatelle-like strips with a vegetable peeler. Bring a large amount of water to a boil, add the Morteau sausage and the bouquet garni. Cook for 40 minutes on low simmer: do not add salt, do not prick the sausage, and add the carrots 2 minutes before the end of cooking.
  • 2.   Meanwhile, slice the shallot. Blanch the tomatoes, peel them, and cut them into cubes. String the celery stalk and cut it into very small cubes. Heat the oil in a non-stick casserole dish, sweat the shallot and celery cubes over low heat for 3 minutes. Add the tomato paste, diced tomatoes, and pre-rinsed red lentils. Pour in 400 ml of cold water. Add the peeled and crushed garlic clove. Cook for 10 minutes over medium heat. Season with salt and pepper at the end of cooking.
  • 3.   Drain the sausage, cut it into 6 pieces. Add them to the lentils along with the diced ham. Continue cooking for 2 minutes over low heat. Pour into a shallow dish, add the carrots, and garnish with chervil.

  • 6 carrots
  • 350 g of Morteau sausage
  • 1 shallot
  • 200 g of tomato
  • ½ celery stalks
  • 1 teaspoon of olive oil
  • 1 tablespoon of tomato paste
  • 250 g of red lentil
  • 1 garlic clove
  • 100 g of ham cubes
  • 6 teaspoon of fresh chervil
  • 1 pinch of salt
  • 1 pinch of pepper
