Instructions

  • 1.   Cut the butternut squash in half, then into slices. Remove the skin, seeds, and fibrous part.
  • 2.   Peel the onion and slice it. Cut the chicken into pieces. Peel and chop the garlic.
  • 3.   Heat the oil in a deep non-stick skillet and brown the butternut squash with the onion. Add 2 tablespoons of water, curry, salt, pepper, and cook covered for 15 minutes. Set aside.
  • 4.   In the same skillet, sauté the garlic and chicken for 5 minutes. Add the vegetables again and cook for another 5 minutes, stirring.
  • 5.   Garnish with a few basil leaves and serve!
