Salmon Skewers

Instructions

  • 1.   Cut into 2x2 cm cubes: the salmon fillets, the zucchini, the bell pepper, and the feta cheese (be careful, feta is particularly delicate to cut into cubes that hold their shape).
  • 2.   Thread the cubes onto skewers (use 4 salmon cubes per skewer) and alternate with zucchini, bell pepper, and feta. Place the skewers in an oven-safe dish.
  • 3.   Pour lemon juice and olive oil over the skewers. Bake for 20 minutes at 180-200°C (350-400°F).
  • 4.   Remove the skewers from the oven and mix soy sauce with the cooking juices.
  • 5.   Serve the skewers on a plate, drizzled with the sauce.
