Lemon Chicken Meatballs

Instructions

  • 1.   Finely chop the chicken cutlets, grate the lemon zest, and squeeze the lemon.
  • 2.   In a bowl, mix the chopped chicken, a quarter of the lemon zest, half of the lemon juice, the egg yolk, and the breadcrumbs. Add the mustard (2 tablespoons), salt, and pepper to taste.
  • 3.   Shape the mixture into small meatballs the size of a large walnut.
  • 4.   Mix the plain yogurt with a few finely chopped mint leaves (I usually use 5 to 6, but you can add more if desired). Add about 2 tablespoons of lemon juice and 1 tablespoon of lemon zest. Chill the yogurt sauce.
  • 5.   Heat oil in a pan and brown the chicken meatballs on all sides until cooked through.
  • 6.   Serve with the yogurt-mint sauce. I often accompany this recipe with rice and a salad. It's light and refreshing! Enjoy your meal!
