Lamb Colombo

A traditional Caribbean dish with exotic flavors... milder than Indian curry, colombo is a blend of spices (which can vary from one colombo to another): turmeric, coriander, chili, mustard, cumin, fenugreek... to which meat (pork, goat, lamb or chicken) and vegetables are added (again, opinions differ on the choice of vegetables). In any case, all the flavors come together during cooking and spread throughout the kitchen and the whole house... and I can tell you, it opens up the appetite!

Instructions

  • 1.   Drizzle the meat pieces with the juice of 1 lemon. Add 3 peeled and chopped garlic cloves and 1/2 chopped chili. Season with salt and pepper. Mix well and let marinate for 30 minutes.
  • 2.   Wash the vegetables. Peel the potatoes and cut them in half. Slice the zucchini and potatoes (thick enough for the zucchini).
  • 3.   In a pot, heat the oil and sauté one chopped garlic clove. Add the previously dried meat pieces and brown them on all sides.
  • 4.   Add finely chopped scallions, thyme, the remaining chili (if using a whole one), salt, and pepper. Add a little water and let cook for 15 minutes.
  • 5.   Dissolve the colombo powder in a little water and pour it into the pot. Add the eggplants and potatoes. Let cook over low heat and covered for 40 minutes. (20 minutes before the end, add the zucchini).
  • 6.   5 minutes before the end of cooking, add the last peeled and crushed garlic clove, chopped parsley, and the juice of the second lime. Mix well, it's ready!

  • 3 zucchinis
  • 2 eggplants
  • 5 potatoes
  • 2 limes
  • 3 shallots
  • 1 stalk of thyme
  • 2 stalk of parsley
  • 5 garlic cloves
  • ½ chili peppers
  • 2 tablespoon of curry powder
  • salt (according to taste)
  • pepper (according to taste)
