A traditional Caribbean dish with exotic flavors... milder than Indian curry, colombo is a blend of spices (which can vary from one colombo to another): turmeric, coriander, chili, mustard, cumin, fenugreek... to which meat (pork, goat, lamb or chicken) and vegetables are added (again, opinions differ on the choice of vegetables). In any case, all the flavors come together during cooking and spread throughout the kitchen and the whole house... and I can tell you, it opens up the appetite!
