Salmon Tartare

Instructions

  • 1.   Remove the skin and bones from the salmon, and cut the salmon into small cubes. Mix the cubes with the juice of 3 lemons and finely chopped fresh onions. Reserve for 1 hour in the refrigerator in a small bowl.
  • 2.   Prepare the sauce in a bowl: Maille Anise and Saffron mustard, capers, pickles, parsley, chervil, olive oil, salt, freshly ground pepper, 3 drops of Tabasco, the juice of 2 lemons. Mix the sauce with the salmon.
  • 3.   Serve in whiskey glasses, then reserve for another 1 hour in the refrigerator before serving very chilled.

  • 10 g of parsley
  • 10 g of fresh chervil
  • 20 g of olive oil
