Instructions

  • 1.   Finely grate the zest of the limes. Put it in a fine sieve and immerse it in a saucepan of boiling water for 2 minutes. Refresh and set aside.
  • 2.   Season with salt and pepper and lightly flour the whiting fillets. Heat 60g of butter in a frying pan. Brown the fillets for 3 or 4 minutes on each side over low heat, the butter should remain blond. Remove the cooked fillets from the pan and place them on plates.
  • 3.   Pour the lime juice into the cooking butter and, off the heat, incorporate the remaining butter in small pieces. Flavor with the zest. Pour this sauce over the fillets. Serve with steamed fennel or leek fondue.
