Stuffed Zucchini and Tomatoes with Parmesan and Sausage Meat

Instructions

  • 1.   Wash the vegetables, cut the zucchini in half lengthwise and remove the top of the tomatoes while keeping the cap aside. Hollow out the zucchini and tomatoes and set aside in an ovenproof dish.
  • 2.   In a bowl, mix the sausage meat, crushed garlic, tomato sauce, half of the Parmesan cheese, and Provence herbs with a fork. Season with salt (sparingly) and pepper.
  • 3.   Drizzle a little olive oil over the vegetables and then stuff them with the meat, without packing it tightly. Sprinkle with the remaining Parmesan cheese and bake for 45 minutes at 180°C (350°F).
