Lyon-style veal escalopes

Instructions

  • 1.   Sweat the chopped onions in butter for 10 minutes over low heat.
  • 2.   Sear the escalopes in a pan with butter.
  • 3.   Brown on both sides, then add the cooked onions.
  • 4.   Let cook covered for a few minutes.
  • 5.   Remove the escalopes, place them on a plate.
  • 6.   Pour the vinegar over the onions, add 1 large knob of butter and chopped parsley.
  • 7.   Pour over the meat and serve.
