Instructions

  • 1.   The dough: South Americans make it with bread dough, but it's crispier with a pie crust.
  • 2.   The filling: sauté the sliced onions in a little olive oil.
  • 3.   Add the sliced meat as well, then season.
  • 4.   Thicken with flour and broth, then add the raisins.
  • 5.   Check the seasoning and sprinkle with thyme or basil in the summer or parsley or other herbs according to taste.
  • 6.   Assembly: roll out the dough to 1/2 cm thickness and cut out rounds the size of a saucer.
  • 7.   Put filling on one half along with olives, moisten the edges, fold over and seal to obtain a turnover.
  • 8.   Make a vent to let the steam escape. Optionally, brush with egg wash.
  • 9.   Bake for 20 minutes in a hot oven (thermostat 8/240°C).
