Smoked Salmon Cheesecake

Instructions

  • 1.   Preheat the oven to 180°C (350°F).
  • 2.   Melt the butter and crush the crackers. Mix the melted butter and crackers, and press this mixture into individual discs (this can also be done in a springform pan). Press the crust firmly.
  • 3.   Mix the cream cheese, cottage cheese, beaten eggs, lemon juice, salmon cut into small pieces (reserving 2 slices for garnish), and chives.
  • 4.   Pour this mixture over the crust and bake for 40 minutes. Allow to cool at room temperature, then refrigerate for at least 4 hours.
  • 5.   Before serving, decorate each slice with strips of smoked salmon taken from the reserved 2 slices.
  • 6.   Enjoy with a fresh salad.
