The famous Canadian Poutine

Travel to Canada with this typical Poutine recipe. Make your own brown sauce and fries for a comforting dish, perfect for winter. For me, it takes me back to Quebec where I had the chance to live for 6 months.

Instructions

  • 1.   Preheat your oven to 200°C (400°F).
  • 2.   Slice the onion and garlic. Sauté them in a small saucepan for 2-3 minutes over medium heat until they become golden.
  • 3.   Pour in the water and scrape the bottom to release the flavors. Add the bouillon cubes and mix well. Let it simmer over low heat to concentrate the flavor. Meanwhile, peel your potatoes and cut them into rectangles to form your fries.
  • 4.   Place them in a freezer bag, add 2 tablespoons of oil, and shake well. This allows for easy mixing without making a mess. The brown sauce is already salty, so there's no need to salt your fries. Arrange your fries on parchment paper and bake for about twenty minutes.
  • 5.   Stir your sauce regularly to ensure it remains smooth. When your sauce has reduced in volume and become darker, pour a small amount into a glass and add the cornstarch. Mix well to dissolve the cornstarch, then pour it back into the saucepan and stir. Add the mustard and tomato paste. Let it simmer while the fries are cooking.
  • 6.   Cut the cheese into large cubes. Flip your fries for even cooking. Poutine fries are not very crispy, so don't cook them for too long. When they are golden and slightly grilled on the edges, you can remove them from the oven.
  • 7.   To finish
    For serving, simply place the fries in a shallow plate, arrange the cheese on top, and generously pour the sauce over it. Enjoy your meal!
