POTATO SALAD WITH TUNA AND HARD-BOILED EGGS

Instructions

  • 1.   In a large saucepan, place the washed potatoes without peeling them. Cover with cold water and bring to a boil. Let cook for 20 minutes. Check the doneness by piercing them with a fork. It should go through the flesh easily.
  • 2.   Drain the potatoes and let them cool slightly before peeling and cutting them into pieces.
  • 3.   While the potatoes are cooking, hard-boil the eggs for about ten minutes in another saucepan.
  • 4.   Let them cool and gently peel them, then slice them.
  • 5.   Put the potatoes in a salad bowl. Season with a little mayonnaise, drained and flaked tuna. Season with salt and pepper and mix.
  • 6.   Also add some arugula, slices of cherry tomatoes, and finally the hard-boiled eggs.

  • 1 kg of firm-fleshed potato
  • 120 g of canned tuna in oil (drained weight)
  • 2 tablespoon of mayonnaise
  • 2 eggs
  • 15 cherry tomatoes
  • 1 handful of arugula
  • 15 black olives
  • salt (according to taste)
  • pepper (according to taste)
