Instructions
1. Pour 2 tablespoons of olive oil into a medium-hot pan, sauté the salmon for 1 minute on each side. Remove the salmon from the pan and set aside.
2. Wash the spinach. Peel and mince the garlic. Grate the Parmesan cheese. Cut the cherry tomatoes in half.
3. In the same pan, add a tablespoon of olive oil. Add the tomatoes, salt, and pepper. Cook gently for 2 minutes. Then add the spinach and cook over low heat for 2 minutes.
4. Pour in the heavy cream, add the Parmesan cheese, and return the salmon fillets to the pan. Simmer over low heat for 10 minutes. Enjoy your Tuscan salmon with pasta.
