Swiss Chard, Potato, and Bacon Skillet

Instructions

  • 1.   Cook the potatoes (in water or steam), peel them, and cut them into small cubes. Set aside.
  • 2.   Wash the Swiss chard. Separate the green leaves from the stems. Then cut them into sections.
  • 3.   Precook the stems in a pot of water for 10 to 15 minutes. Drain and set aside.
  • 4.   In a skillet, heat olive oil and sauté the bacon with shallots. Add the Swiss chard leaves, stems, and potatoes. Stir everything together. Add garlic. Season with salt and pepper. Add parsley.
