Lemon Tart

Instructions

  • 1.   Mix flour, salt, and sugar. Add softened and diced butter. Knead. Add the egg.
    Result: homogeneous dough.
    Cover and let it rest in the fridge for 2 hours.
    Roll out the dough in a pie dish. Place a weight on top to prevent it from rising. Bake for 10 minutes at 200°C, then 180°C for 15 minutes. Let it cool outside the oven.
  • 2.   Grate the zest. Squeeze lemons (15cl of juice). Beat eggs with zest and sugar. Add cornstarch. Boil the lemon juice. Add it to the mixture while whisking vigorously. Put everything in a saucepan, heat over low heat for 3 minutes. Stir constantly. Stop cooking, let it cool down. Add diced butter and mix until you have a homogeneous mixture.
    Fill the tart shell with the cream. Let it cool for at least 1 hour.

  • Pâte :
  • 200 g of wheat flour
  • 100 g of icing sugar (or fine sugar)
  • 80 g of butter
  • 1 egg
  • 1 pinch of salt
  • Crème citron :
  • 4 lemon (for juice + zest)
  • 125 g of cane sugar
  • 50 g of butter
  • 3 eggs
  • 1 tablespoon of Cornstarch
