Chicken with Onions and Red Rice

Instructions

  • 1.   Red Rice

    Bring a pot of salted water to a boil.

    Cook the red rice for 35 to 40 minutes until tender.
  • 2.   Marinade

    While the rice is cooking, peel and finely chop the ginger.

    In a bowl, dissolve the cornstarch in warm water. Add the soy sauce, ginger, vinegar, and sliced chicken. Season with salt and pepper.

    Mix well. Let marinate in the refrigerator for 20 minutes.
  • 3.   Slice the onions.

    In a sauté pan, heat a drizzle of cooking oil over high heat.

    Sauté the sliced chicken with its marinade for 5 minutes.

    Set aside the meat.

    In the same sauté pan, heat another drizzle of cooking oil over medium-high heat.

    Sauté the onions for about 10 minutes until cooked.

    Add the chicken and cook for 2 minutes. Season with salt and pepper.

    Finely chop the cilantro (including the stems, they are edible).
  • 4.   Serve your chicken with onions accompanied by red rice and garnished with cilantro.
