Roasted Landes sand asparagus with Parmesan

Instructions

  • 1.   Peel the asparagus from top to bottom. Cut off the base and save it for a soup.
  • 2.   Heat the butter and olive oil in a pan. Add the asparagus and roast them over medium-low heat for 6 to 8 minutes, turning them regularly to brown them well and cook them al dente. Season with pepper at the end of cooking.
  • 3.   Arrange the asparagus on a plate and sprinkle Parmesan shavings over them using a peeler. Place the cured ham in chiffonade on top of the asparagus and serve.
