Rigatoni with green asparagus, cherry tomatoes, and Parma ham

Instructions

  • 1.   Bring water to a boil for the pasta.
  • 2.   Wash and cut the green asparagus into large pieces.
    Finely chop the shallot.
  • 3.   In a wok-style pan, sauté the shallot.
    Tear the Parma ham by hand and add it to the pan.
  • 4.   Deglaze with white wine.
  • 5.   Add the green asparagus and cook for 3 minutes.
  • 6.   Add the Espelette pepper, cherry tomatoes, and a pinch of salt.
    Cook over low heat and covered for 10 minutes.
  • 7.   Add the cream and let it reduce for 3 to 4 minutes.
  • 8.   Drain the pasta and add it to the sauce.
    Mix well for 30 seconds and serve.

  • 1 bunch of green asparagus
  • 8 slice of Parma ham
  • 1 shallot
  • 200 ml of soy cream
  • 1 cup of cherry tomato
  • 10 ml of white wine
  • 1 Espelette pepper
  • 1 flower of salt
