Rigatoni with green asparagus, cherry tomatoes, and Parma ham

Instructions
1. Bring water to a boil for the pasta.
2. Wash and cut the green asparagus into large pieces.
Finely chop the shallot.
3. In a wok-style pan, sauté the shallot.
Tear the Parma ham by hand and add it to the pan.
4. Deglaze with white wine.
5. Add the green asparagus and cook for 3 minutes.
6. Add the Espelette pepper, cherry tomatoes, and a pinch of salt.
Cook over low heat and covered for 10 minutes.
7. Add the cream and let it reduce for 3 to 4 minutes.
8. Drain the pasta and add it to the sauce.
Mix well for 30 seconds and serve.
