Sweet Potato and Ground Beef Parmentier

Instructions

  • 1.   Peel the sweet potato and pumpkin, cut them into 3 cm pieces. Put them in a glass casserole dish with 150 ml of water and a pinch of salt. Cover and cook for 10 minutes in the microwave (800 W). Drain (reserve 50 ml of cooking juice for later), pour into a dish and mash with a potato masher. Add the margarine and a pinch of nutmeg. Season with pepper and adjust the salt seasoning.
  • 2.   Preheat the oven to 180°C (350°F). Peel the garlic cloves and onion, then chop them. In a bowl, mix the ground beef with the herbs and coriander. Season with salt and pepper. Grease a 1-liter non-stick baking dish with olive oil. Spread the ground beef. Bake for 10 minutes.
  • 3.   Remove the dish from the oven, pierce the meat and drizzle with the reserved cooking juice from the vegetables, add the sweet potato/pumpkin puree on top and smooth the surface. Whisk the egg with the breadcrumbs, spread it on top, then sprinkle with grated gruyère cheese. Bake for 15 minutes. Let it rest for 10 minutes in the turned-off oven before serving.

  • 2 teaspoon of margarine
  • 1 teaspoon of nutmeg
  • 2 garlic cloves
  • 1 onion
  • 400 g of ground beef patty
  • 6 teaspoon of fresh coriander
  • 1 teaspoon of olive oil
  • 1 tablespoon of breadcrumbs
  • 2 tablespoon of grated Gruyère cheese
  • 1 pinch of salt
  • 1 pinch of pepper
