Low-sugar and Low-GI GOUGÈRES

Low-GI GOUGÈRES, melt-in-your-mouth deliciousness I had been wanting to try making choux pastry with low-GI ingredients for a long time because I love it!!! My friends and family loved it too (I brought these gougeres for appetizers at a friend's house).

Instructions

  • 1.   You can make it on the stovetop or with a mixer, much less tiring because you have to keep stirring all the time.
  • 2.   In a saucepan or mixer, melt the butter with 185g of water, medium heat (6 minutes at 90°C, speed 3).
  • 3.   Still on the heat, add the flours all at once and keep stirring with a wooden spoon (or 2 minutes at speed 6 without heating in the mixer). You will have a slightly dense dough, that's normal.
  • 4.   Off the heat, add the beaten eggs one by one while continuing to mix (3 minutes, speed 6).
  • 5.   Season with salt and pepper, then add the grated gruyère cheese and mix for 1 minute (speed 6).
  • 6.   Transfer the dough to a piping bag and pipe small mounds onto a baking sheet lined with a non-stick mat/paper. Bake (in a preheated oven) at 180°C for 25 to 30 minutes.
  • 7.   Before baking, if your dough mounds are not well spread out, you can fix it by dipping your finger in water beforehand (to prevent sticking).

  • 3 eggs
  • 80 g of grated cheese
