Instructions
1. Cut the tenderloins into regular pieces.
Season the tenderloins with salt and pepper.
2. In a pan, brown the pieces of tenderloins on all sides in duck fat for 2 minutes.
3. Remove the excess fat from the pan.
Add the liquid fresh cream.
4. Let simmer for 2 to 3 minutes (the meat should be pink).
While the tenderloins are cooking, cook the fresh tagliatelle in a large amount of salted boiling water (use at least 4 liters of water with 10 grams of salt per liter) for 2 to 3 minutes.
5. Drain the pasta.
Pour the sauce over the pasta.
Sprinkle with grated Parmesan cheese.
Gently mix and serve immediately.
