SUGAR-FREE AND LOW GI CHOCOLATE FONDANT

#sugarfree #flourless with 1 magical ingredient a delight. I've tried chocolate cake with zucchini, with avocado, but even though they were okay, they weren't as good as my classic recipe. So I tried a version with red beans. - 1st test: not bad but too dry - 2nd test: better but the bean flavor was a bit too strong - 3rd test: perfect balance, I love it and so does my family! So I can finally share the recipe with you.

Instructions

  • 1.   For 8 individual fondants or a whole cake (in a silicone loaf pan):
    - 200g of dark chocolate, minimum 65% cocoa
    - 100g of cooked red beans (from a jar) GI=40
    - 70g of butter
    - 60g of plant-based milk (almond milk here)
    - 2 tbsp of agave syrup (optional)
    - 4 eggs
  • 2.   1 - Melt the chocolate and butter in the microwave.
  • 3.   2 - In a blender, combine all the ingredients along with the melted chocolate. Blend until there are no more bean pieces. Pour the mixture into silicone muffin molds.
  • 4.   3 - Bake for 10 minutes at 180°C (356°F) for a molten center (longer if making a whole cake, about 25 minutes, check at 20 minutes of baking time).
  • 5.   The center should still be slightly wobbly.

    Let cool for at least 15 minutes for individual fondants or 1 hour for the whole cake (or longer for easier unmolding).
  • 6.   It's your turn to try and be amazed by this cake!

    For an even lower GI, use chocolate with 70% cocoa or higher.
