SESAME & LIME SHORTBREAD COOKIES, sugar-free and low GI

#LowGI #vegan and quick ⏰ it's delicious What a great idea to have bought too many limes, as a result, I had to try out many recipes with them and all my creations were successful. There was the raw fish ceviche, the mango ice cream, these cookies, my Dahl, etc. So let's talk about cookies. I don't always manage to find low GI versions in stores, so here's a quick recipe that you should enjoy. Only 2.5g of coconut sugar per cookie! Fiber thanks to oat bran, so no guilt. A healthy snack that my son loved too (and even my husband).

Instructions

  • 1.   Details

    - 35g of odorless coconut oil
    - 20g of toasted sesame seeds
    - 1 lime: zest + juice
  • 2.   1 - Mix oat bran, flour, almond powder, coconut sugar, and sesame seeds.
  • 3.   2 - Add liquid coconut oil (heat in the microwave for a few seconds) then the lime juice (about 20g) and zest.
  • 4.   3 - On a perforated baking sheet lined with a non-stick mat, shape compact dough rounds using a cookie cutter. Bake for 15 minutes at 180°C (convection oven).
  • 5.   Important: wait for the cookies to cool completely before moving them. They will harden.
  • 6.   And these cookies with a cup of tea and a book, it was just a dream 💚💛💙❤ for a busy mom after the back-to-school rush 😉
    Being able to finally sit down for a few minutes!
