Low GI Lemon Tart with 0 Sugar and Low GI

After numerous tests, I have finally found the perfect recipe. Lemons are very acidic, so recipes with lemon often contain a lot of sugar, making it difficult to avoid. I also didn't want to add a ton of sweetener. So here is the recipe for 6 to 7 tartlets:

Low GI
Course: Dessert
Preparation time: 10 minutes
Cooking time: 15 minutes
Rest time: 60 minutes

Instructions

  • 1.   Note:
    - 1 lemon (zest and juice)
  • 2.   Prepare the tart crust:
    Mix everything together. Knead with your hands and roll out into tartlet molds.
    Bake for 15 minutes at 200°C (392°F).
  • 3.   Prepare the lemon cream:

    Mix everything together and heat over medium heat, whisking constantly until the mixture thickens into a cream.

    Chill for 1 hour, covered, to prevent a "skin" from forming on the surface.
    Fill the cooled tartlets with the lemon cream.
  • 4.   Yes, it's pastry day on Wednesdays, so get cooking 😉

    Why tartlets instead of a tart? Simply because the crust is easier to roll out on a smaller surface.

Ingredients for servings

  • Pâte à tarte : :
  • 170 g of hulled barley flour
  • 50 g of almond powder
  • 6 cl of vegetable oil
  • 7 cl of water
  • 1 tablespoon of coconut sugar
  • Crème au citron :
  • 1 lemon
  • 100 g of cottage cheese
  • 50 g of butter
  • 1 tablespoon of hulled barley flour
  • 45 g of birch sugar or xylitol
  • 40 g of oat milk
  • 1 egg
  • 1 egg yolk
