Instructions
1. Sauté the onion
Add the whole pork rib
Brown on each side
Add a spoonful of water
Cover and let cook for 10 minutes
Add the potatoes and vegetables
Mix, then add all the spices except the coriander and one clove of garlic
Brown everything
Turn the pork rib over
Add the remaining water with the juice and zest of an orange (zest to be removed before squeezing the 3 oranges)
Let cook over medium heat for 30 minutes
Then over low heat for 45 minutes
Cut the pork rib
Put it back in the cooker (or casserole dish)
Pour the sauce from the preparation over it
Cover until the end of cooking
Add the coriander and crushed garlic to the meat
Let the temperature decrease
Serve with homemade bread

If you want a more shredded meat, continue slow cooking until the end
