DUCK BREASTS WITH CREAMY WHEAT

Instructions

  • 1.   Bring 2 ½ cups of water to a boil, then add the wheat. Cook on low heat for 10 minutes.
  • 2.   Using the tip of a knife, score the skin of the duck breasts in a crisscross pattern.
  • 3.   Place the meat in a hot skillet. Sear each side for five minutes over low heat.
  • 4.   Take 2 teaspoons of duck fat and add it to the wheat.
  • 5.   Discard the remaining cooking fat, add the vinegar, and continue cooking for 5 to 8 minutes, flipping the meat regularly.
  • 6.   Serve immediately.

Notes & Suggestions

  • Add sugar snap peas or golden butter beans as a side dish for the duck breasts.
