Course: Main course
Preparation time: 60 minutes

Instructions

  • 1.   Rinse the rice several times until the water becomes clear. Put it in a saucepan with 1 1/2 cups of water and bring to a boil for 5 minutes, covered. Continue cooking for 10 minutes over low heat. Leave covered for 10 minutes off the heat. It is important not to lift the lid during this entire time. Transfer it to a large dish to cool down and let it air.
  • 2.   Meanwhile, prepare the rest of the ingredients: drain the mackerel fillets and cut them widthwise to make large sticks. Cut the avocado into thin slices.
  • 3.   Dissolve the sugar in the rice vinegar and pour this mixture over the rice. Stir well.
  • 4.   Place a sheet of nori, shiny side up, on a bamboo mat. Take 1/4 of the rice and spread it (with wet fingers) over the entire surface.
  • 5.   Flip the nori sheet (rice side down on the mat).
Arrange the different ingredients (mackerel, avocado, mayonnaise) 2 cm from the bottom edge of the nori sheet, forming a not too wide strip.
  • 6.   Gently roll everything up, starting from the bottom, using the mat to tightly roll it. Cut each roll into 6 sushi rolls and cover them with a piece of smoked salmon. Chill before serving with a little soy sauce.

Notes & Suggestions

  • Add thin cucumber sticks for crunchiness or pieces of omelette with soy sauce. And if you prefer less pronounced flavors, replace the mackerel with plain salmon.
