Pork Tenderloin with Brie and Apples

Instructions

  • 1.   Wash and quarter the apples, sauté them in salted butter in a hot pan.
  • 2.   Meanwhile, cut the pork tenderloin in half lengthwise and fill it with Brie. When the apples are caramelized, add them to the filling.
    Close the tenderloin and tie it together.
  • 3.   Preheat the oven to 200°C (400°F).
    Sear the pork tenderloin in a pan on all four sides.
  • 4.   Place the tenderloin in an ovenproof dish with a bouquet garni. Pour a glass of water into the dish and add two or three pieces of butter for extra richness. Season with salt and pepper.
    Bake for about 20 minutes at 200°C (400°F), basting the tenderloin regularly and flipping it halfway through cooking.
  • 5.   Once cooked, remove from the oven, season with pepper, and let it rest covered for about 10 minutes.
