Gourmet gizzard salad

Instructions

  • 1.   Wash and peel the mushrooms. Sweat them in a pan without any fat.
  • 2.   Peel the potatoes and cut them into cubes. Add them to the mushrooms. Cook the gizzards in the microwave, in a double boiler, or in a pan.
  • 3.   Cut the figs into small pieces and the onion into slices.
  • 4.   In the serving plates, place the salad, mushrooms, and potatoes, onions, croutons, figs, and gizzards.
  • 5.   When serving, drizzle with vinaigrette.

  • 4 Roseval potatoes
  • 150 g of button mushroom
  • 4 figs
  • 1 red onion
  • 1 bag of crouton
  • 1 balsamic vinegar
  • 1 oil
